Stiles Switch BBQ & Brew said last year when they announced their yet-to-be-named concept off US 290 West that the restaurant would have a different name and not be an exact replica of the barbecue restaurant on North Lamar Boulevard. Those teases got a little clarification today when owners announced the The Switch, which is working in collaboration with chef Todd Duplechan of Lenoir, will serve Cajun specialties in addition to smoked meats. Duplechan, whose family is from Louisiana, says he intends to include gumbo, smothered pork chops, rice and gravy and dishes less frequently seen in Texas, like cush cush and daube. The restaurant is one of about two dozen exciting openings announced for Austin in 2018.
The restaurant located in the Belterra Village development at 290 and Nutty Brown Road will be led by Stiles Switch veterans Bill Dumas and Christopher McGhee, along with Stiles Switch founding pitmaster Lance Kirkpatrick, will split time at both locations. Tony Pollock, original director of operations for Hopdoddy ,will serve as the general manager.
The Switch will also have a full indoor-outdoor bar area focusing on margaritas and Texas beer. Behind the scenes, the custom pit room will feature four Moberg custom smokers and a cold smoke room which will be used for cold smoking pork chops, bacon, and fish.
The Switch is slated to open in March.
